It's the season of the casserole around these parts. The guys are loving this Mexican one, where I slice up whatever veggies are hanging around the fridge with chili powder, cumin, black beans and some chicken. Add cheese and salsa. Bake. Yum.
I'm also getting much quicker at knitting hats.
I just may be ready for a sweater next.
And A's been having lots of fun hangning out with Madeline.

Is the casserole really as simple as you make it sound? I might try that. How long do you put it in for and at what temp?
Pretty close to that simple. Make sure you grease the bottom of the pan. (I just sprinkle some olive oil and wipe it around with a paper towel.) In a saute pan, put about 2 T of chili powder and 1 T of cumin. Cook that for about one minute. Then throw in some onions and cut-up chicken. Cook over medium heat until the chicken is cooked. Then I just layer - veggies, chicken, salsa. Some layers I put cheese, sometimes black beans. If I'm not using potatos, I put a layer of two of tortillas (kind of link lasgna noodles). Make sure you put salsa on top. Or canned tomatos. Bake at 350 for 1 hour, 15 minutes.
